Howdy y'all!!!! Today started out muy bueno with huevos (eggs) for breakfast....or rather egg beaters. Behold the whole wheat tortilla, 1/3 cup egg beaters, mushrooms, yellow squash, spinach, salsa and Cholula creation:

I rolled it up and went to town. Very filling and it seemed to stick with me for a long time! I'm enjoying these change-ups for breakfast!
Took the kids to school and went on to cooking class at Great News. I grabbed a double, tall, skinny vanilla latte at the 'bucks before class started. Today was a shorter class where you get one plate of food (lunch) and a dessert. The theme of the class was "Autumn Flavors". We had a Maple-Mustard Sauced Pork Tenderloin with Roasted Butternut Squash Risotto with Pancetta and Green Beans with Hazelnut Brown Butter. My picture is super lame because I forgot to take it before I started eating. They did such a nice job plating the food and it looked so good that I just dove in.



The pork tenderloin was just that...tender! The maple-mustard sauce was so good....it would also be good on chicken (hubby doesn't like pork). Now, my favorite part: the risotto. It might be my favorite risotto....EVER. It was soooooo creamy and comforting. I will definitely be making it again! It was super yellow because our instructor, Phillis Carey, attempted to put the called for "pinch" of saffron threads in but accidentally dumped a whole bunch in. I didn't mind....tasted great and was very bright! :) The green beans were just the way I like them....crispy and buttery.

Next was dessert: Gingerbread Cupcakes with Lemon Cream Cheese Frosting. Autumn had officially arrived when I put this in my mouth. Fabulous.

I think cupcakes are one of my favorite desserts ever.

After class, I made a quick trip to Costco to replenish a few things (chocolate chips, whole wheat bread, vegetable oil, Claritin) and bought some Halloween candy. I stopped at a friend's house to catch up (I've been MIA lately) and then went for a easy hour walk. I hadn't planned on working out today but I'm glad I went for a walk. My mood was definitely uplifted when I was done.

Dinner was a healthier version of an Enchilada Lasagna. I love casserole type dishes....I'm not going to lie. I love how you prepare everything, put it in a pan, toss it in the oven and have all this time to get cleaned up....so that when you're done with dinner there are minimal dishes left to do. I also just like the comforting feeling I get when eating casseroles.

Enchilada Lasagna

(Makes 4 servings)

Ingredients:

  • 1.5 c reduced fat Mexican Cheddar cheese

  • 1/2 pound ground turkey

  • 1/2 c chopped onion

  • 1/2 c chopped green pepper

  • can of Rotel and small can of green chilies (drained)

  • 1 c reduced fat cottage cheese

  • 2 tsp chili powder

  • 1/4 cup jalapenos, chopped (I used more and left the seeds in cuz that's how I roll)

  • 2 garlic cloves, crushed

  • 1 c taco sauce

  • 6-9 corn tortillas

Directions:

  • Preheat oven to 375 degrees. Spray 11x9 baking dish with cooking spray.

  • Heat the meat with the onions, bell peppers, jalapenos and chili powder in a non stick skillet until brown. Add the garlic in the last couple of minutes. Put cheddar cheese (saving 1/2 cup), diced tomatoes, green chilies and cottage cheese in a large bowl. Mix the meat in, stir well.

  • Place enough tortillas side by side to cover the bottom of the pan. Cover with half of the mixture. Add enough tortillas to cover that and put the rest of the mixture on top.

  • Pour the taco sauce over the top and sprinkle with remaining cheese. Bake for 20 minutes, let cool for 5 minutes. I actually broiled it for a few minutes at the end so the cheese would be golden.

We really enjoyed it! I served it with corn and poured tons of Cholula over the whole thing. Again, hunger got the best of me and I forgot to take a picture of my plate but here is the leftover "lasagna":



It may not look like the most appetizing thing ever but yum yum. Delicious! Now I'm about to put the kids to bed and possibly hop in the hot tub with the hubby. Have a good night all!

OUCH!

I deserved that.

Before I give you a recap of the weekend (more celebrity pics!), let's review today shall we?

Breakfast......was different!!!!! My brother (who admitted to being an occasional reader of my blog) told me my repetitive breakfasts were boring. So, let's spice things up shall we? Looks like my free sample of Kashi's Honey Sunshine cereal came at the perfect time! I poured a half cup of unsweetened vanilla almond milk over it and had a bowl of strawberries and a cup of coffee (I really needed it!!).


The cereal was pretty good....reminded me of Captain Crunch but healthier tasting. :) I was surprised to see so much fiber in the cereal! Kids don't have school today so I had a leisurely time getting dressed this morning. I went to Step and Sculpt class and our instructor really kicked it into high gear today which was awesome!! Hopefully I'll be sore tomorrow....I really like being sore!!!

After class I went to get gas and grocery shop for the week. I came home and made a chicken salad wrap. In the chicken salad was: canned chicken, a plum tomato, celery, bell pepper, pickles, red onions, shredded carrots, 1 tablespoon of light mayo, a couple of squirts of Dijonaisse, garlic salt and paprika. I put it in a La Tortilla high fiber whole wheat tortilla with some spinach and attempted to roll it up....it was a fight but I won. I had a half an apple with it. YUM.

Since I've been traveling and busy lately, things are starting to pile up all around the house....no me gusta!!! So I spent a few hours cleaning and organizing. It feels so great to get everything put away. After all that hard work, I was hungry. I didn't get any nut butter this morning so snack time was perfect for it. Behold a peanut butter sandwich on whole wheat and some more apple. So satisfying!!!


Ok, onto the weekend. Saturday after spin class, I showered and got dressed and all packed for LA. We all loaded in the car and started the two hour drive. We didn't have time to stop for lunch so it was fast food while driving (not my favorite combinations). Del Taco was the unanimous choice (almost unanimous) choice. I had a spicy jack quesadilla and a veggie burrito. I did enjoy it, I won't lie. We dropped the kids off at my sister in law's and got dressed for the night. We headed over to Staples Center for the Klitschko fight. We went to a pre-party and I had a couple of glasses of chardonnay and some snacks. The food was just ok....I had some shrimp cocktail, salad and prime rib. I tried some of their mini desserts: brownie, lemon bar and a couple of unknowns. :) Look who I got a picture with (two weekends in a row):

After the fight we met up with my brother, his wife and some friends for dinner at Hal's in Venice. I managed to get a shot of my pizza before I destroyed it. :) According to the menu, it had roasted pinenut sauce, organic guanciale (what's that?), heirloom tomatoes and california burrata. It was soooooo good!!!!
There may have been another glass of chardonnay.
We stayed at my brother's house that night. I had a much needed cup of coffee and a bowl of fresh pineapple in the morning. We met up with some other friends at Casa Del Mar (the hotel I got married at!) in Santa Monica for a late breakfast. I had an mushroom, asparagus and cheddar omelet with whole wheat dry toast and a vanilla non fat latte (sorry, no pic). Why do eggs and cheese taste so good the morning after a lot of wine?
We went over to my parent's house and hung out for a bit before it was time to meet up with my sister in law, more family and my kiddos for a early dinner at Souplantation. I didn't bother taking a picture because it looked exactly like the pictures I have recently taken (except for a couple pieces of pizza bread and little lava cake). ;) We drove back to San Diego and that was that.
So today I'm back on the healthy eating track. Hubby won't be home for dinner so it might be leftover Asian chicken noodles (with the funky vinegar flavor). Lucky me. :)

The weekend is here!!!! I bet the suspense is killing you.....what did I have for breakfast you ask??? Well....repeat meal offender here: multi grain English muffin with a tablespoon of Barney Butter and 3/4 cup of strawberries. But...I also had a cup of coffee with a couple tablespoons unsweetened vanilla almond milk and splash of sugar free vanilla syrup.


After taking the kids to school, I went to my Step and Sculpt class and had a great workout. Then I went and got my nails & toes done, and stopped at Subway for lunch. It looked like this:



Six inch turkey on wheat with everything except olives. (No cheese, no mayo, no oil but LOTS of regular and spicy mustard, vinegar and lots of pepper). I really love me my Subway. :) I ran a bunch of errands (nothing exciting) and there just so happened to be a Golden Spoon next door to the Trader Joes I was at. Did I plan it that way....maybe. :) I had a small half Cake Batter, half Fudge Brownie. Nam Nam.

Went home and started getting the kids and I packed for tomorrow. Hubby and I are taking the kids over to my sister in law's house in Los Angeles to spend the night and we are going to the Klitchko boxing fight. Yes, another fight....I can't get enough. :)

So I decided to re-create a meal that I had in cooking class earlier in the week for tonight's dinner. It was the Salmon one with the Asian noodles. Well, I did a dumb thing. The recipe called for Rice Vinegar. I didn't have any plain rice vinegar so I used Seasoned Rice Vinegar. I know the whole time I was doing it that it probably wasn't a good idea but I did it anyway. Well, it was a little.....tangy. Not the best but also not the worst. I did make chicken for it instead of salmon since hubby doesn't like fish. The chicken was awesome though. I will make this recipe again but do it right next time. At least it looks nice. :)


So now I'm enjoying a glass of leftover champagne from the rest of a bottle opened at my bunco party a few weeks ago. My friend Dina (hi!!!!) let me borrow this fabulous wine stopper thing that really seals it....the champagne is still bubbly!!! Amazing. (Yes Dina I still have it and haven't forgotten to return it). :)

So there won't be a post tomorrow night (don't cry)...I'm not bringing my laptop with me because I know I won't have any time to post. But stay tuned....hopefully I'll get some good shots of celebrities tomorrow night. Good night all!

Wow, it was hot today. About 101 degrees where I live. Isn't it supposed to be fall already??

Guess what I had for breakfast?? Yes, I'm a meal repeater. I'm a big offender of it in the morning. I like what I like...what can I say?? Multi grain English muffin with a tablespoon of almond butter (almost out! yikes!!! Who makes the best almond butter...need to buy more!) and a half cup of strawberries. Basically I plan breakfast around nut butters.
After dropping the kids off at school, I went to spin class....we did 45 minutes of glorious spinning and 15 minutes of abs. I cannot seem to figure out how to get a calorie count on my new Garmin Forerunner heart rate monitor. It doesn't seem to calculate my calorie burn when I'm doing "inside exercise". I even turned the GPS off....any suggestions? I really miss seeing my calorie burn at the end of my workouts.
My mom (who lives near Los Angeles) came to visit today. We did our usual: shopping. Didn't buy anything exciting today: just clothes for the kids and a birthday present for a friend's son. Lunch was at Bloomingdales and I forgot to take a picture of my glorious lunch: Salmon Caprese Salad. It's mixed greens with a piece of yummy salmon on top and all around it are tomato slices and mozzarella slices. I poured balsamic vinegar all over it and went to town.
After shopping we came home and grabbed the kids and went to Tio Leo's for dinner. That's the place I told you about that has whole wheat tortillas! Bless them!!! I had about 4 tortilla chips and salsa. I usually don't touch them at all for fear of eating the whole basket but I was able to restrain myself tonight. I ordered the veggie burrito which has beans, rice and a little cheese in a whole wheat tortilla. It comes with a Mexican cole slaw thing which I love. It's a oil and vinegar base not mayo.
I topped the whole thing with tons of salsa and my beloved Cholula. I succeeded in putting quite a nice dent in it. And there you have it folks. Have a great night!

Hello all!!!! I feel great today! Why?? Because I worked out and ate healthy all day!! It's funny how we eat unhealthy stuff and feel like crap but when we eat healthy, we feel great...why do we keep going back to the unhealthy stuff?? Something to ponder.... :)

Breakfast was a slice of Ezekiel toast with a tablespoon of Barney Butter and a half cup of strawberries:



Dropped the kiddos off and school and went to spin class. I was, yet again, the only one so we did half spin and half full body weights. I'm starting to feel like myself again!!!

Came home and freshened up and hubby and I went to lunch at Souplantation. Get a load of this salad beast!!!! A little side of low fat chili and an iced tea completed the meal nicely.



Picked up the kids and came home to pay some bills, learn more about my HRM (heart rate monitor) and get some stuff cleaned up. How do things keep accumulating all over the place??

I became super hungry all of a sudden so I had one of my favorite breakfasts for a snack: Fage with Fiber One and strawberries. Can you tell I like strawberries?



Went with hubby to look at a couple of homes. We aren't moving but he loves to look at homes....I do too...it's fun to see how people decorate them.
Dinner didn't get a picture. I made "Ranch" chicken breasts: dip in low/non fat sour cream and then bread with a mixture of bread crumbs and ranch dressing mix (the powder). This is one of hubby's favs! I served it with a Weight Watcher recipe for creamed spinach (spinach, low fat cream cheese, a little butter, nutmeg and a little parmesan cheese) and a baked potato. Nothing too fancy but tasty!

"That's what you get for waking up in Vegas."
Not great but not as bad as it could be.
So last night I decided on Trader Joe's Orange Chicken (off the hook good!) for dinner along with their frozen brown rice (also off the hook good) and some broccoli. It was nice getting some healthy food in my stomach!

Today's breakfast was my usual Fage yogurt mixed with a tablespoon sugar free strawberry jelly, a half cup of fiber one cereal and a half cup of strawberries. I didn't take a picture cuz it looks just like all the others.
I dropped the kids off at school and grabbed a tall, double, skinny vanilla latte from Starbucks and then went to cooking class at Great News. Today's topic was Fast & Fabulous Entertaining. The few recipes I forgot to take pictures of because I was hungry and very excited to eat! The first recipe we had was Firecracker Salmon with a Spicy Ginger-Soy Glaze on Asian Noodles with Julienne Vegetables. OMG.....it was sooooo good!! The next recipe was Filet Mignon with Rich Balsamic Sauce with Blue Cheese Potato Gratin. I'm sad I didn't get a picture of this one because it was AMAZING. The potato gratin rocked my socks off!
Third recipe was Bourbon-Brown Sugar Braised Pork Tenderloin with Garlic and Rosemary Roasted Sweet Potato Slices. Also, very good! Reminded me of the holidays. :)



Next up was Bacon, Feta and Roasted Pepper Stuffed Chicken Rolls and Orzo Tossed with Artichokes, Olives and Feta. Mmmmmmmm......so tasty!!!

And lastly, was dessert: Cinnamon Raisin Apple Bread Pudding with Cider Custard Sauce. OMG....to DIE for!!!!



So much for healthy food. :)
Picked the kids up from school and went to the grocery store to stock up on stuff for dinner this week. Then it was off for a run. It felt good to get my legs moving again! I got my new Garmin Forerunner 305 GPS/heart rate monitor and tried it out today. Love it!!!! I ran 2.6 miles and walked the rest for a total of 4.12 miles (hills included!). Nice!!!
After another shower, I made dinner. No picture....I left my camera upstairs and hubby was too hungry to wait for me to grab it. I made this recipe for Weight Watcher's Baked Turkey and Jack Cheese Chimichangas. It's been a favorite of hubby and mine for several years. I served it with a medley of corn, zucchini, onions, bell peppers and tomatoes with tons of salsa and Cholula!
So there you have it folks, Melissa is getting back on track (except for the bread pudding and blue cheese potatoes). ;)

Vegas Recap Part Three

So, Saturday morning we went down to the Society Cafe for breakfast. I started off with a non fat vanilla latte. Yum!

Followed by a yogurt parfait. Very good!!!

After breakfast I went up to the room and got freshened up and went shopping. Met the hubby afterwards for a little gambling. Since we had a late breakfast, I wasn't really in the mood for lunch so I had the following snack before getting ready for the big fight night. The crackers turned out to be very good and very addictive!!
I had a relaxing time getting ready with my crackers and wine. The finished product:

Before the fight, we met some friends and went to an HBO party. Tyrese was there (and he sang the National Anthem at the fight). I had some great appetizers!!

After the fight, I was starving!! We went to eat at Noodles in the Bellagio. We all ordered one thing and shared everything. It was very satisfying!!!

So the last thing to report about is lunch today. We stopped by our favorite little Mexican joint from college days: Chanos. I had a bean and cheese burrito and some fries.

And now it's time to get back to reality. The scale is going to be scared when I get on it tomorrow. I never made it to the gym and I didn't eat as healthfully as possible but I had a great time and will be back on track tomorrow. Thanks for reading!

Vegas Part Two & Emmy Recap!

Good Morning! I'm enjoying a wonderful latte in my hotel room as I type this. The Emmy's were fabulous last night...I wasn't allowed to bring in a camera but I got a couple of shots on my phone.

A good time was had by all! We went afterwards to The Palm for dinner. No camera but I split a tomato mozzarella salad with the hubby and had Blackened Ahi Tuna with a side a cream spinach for dinner. It was all accompanied by a nice glass of Pino Grigio.
Back to the weigh-in Vegas:

After the weigh-in, we gambled a little and then got ready for The Jersey Boys show. What a fabulous show....I highly recommend it!!!

Afterwards, we went to the Okada Japanese Steakhouse for dinner. We had dinner at the Tapanyaki table (where they cook the food in front of you). I felt funny whipping out a camera to take pictures of my food in front of entire table of strangers so no pics. Dinner started with the typical ginger dressing salad, followed by a scallop appetizer (I got Dave's....he doesn't like anything that came out of the ocean). I ordered the sea bass for dinner and it was melt-in-your-mouth delicious. I had a glass of chardonnay to complete the meal. :) Dessert was a strange panna cotta type thing with pineapple. One bite and that was that.
I guess I need to get my lazy bum up and start getting ready for the day (it's almost 11AM!). The hubby wants to eat at this Mexican shack for lunch (we used to eat here when we went to college...USC....all the time!) Stay tuned for the rest of the Vegas report. Bye!
